There are endless ways to serve steamed broccoli; with chilli and almonds, shallots and macadamias, anchovies and lemon or just on it's own! I had onions and walnuts on hand, so this is what I made.
- 300 grams broccoli, cut into large chunks
- 1 tablespoon olive oil
- 1 small-medium sized onion, very finely chopped
-1/2 cup of walnuts, chopped
- juice of 1/2 lemon
- salt to taste
Steam the broccoli. If you like a vibrant green, al dente broccoli 5-6 minutes should be enough. If you like your broccoli nice and soft, steam for a further 2-3 minutes.
In the meantime, heat the olive oil in a small frypan over a low flame and add the onion. Fry for about 5 minutes, stirring regularly, until the onion begins to caramelise. Add the walnuts and fry for a further 3 minutes before adding the lemon juice and a generous pinch of salt.
Place the broccoli in a serving dish and spread the walnut dressing over the top. Serve immediately.
