Broccoli Soup

Not only is this recipe simple, using just a handful of ingredients, it's also quick. You'll be ready to eat in 30 minutes!

- 2 tablespoons butter (or olive oil)

- 2 cloves of garlic, crushed

- 6 cups of vegetable stock

- 750 gram broccoli, chopped

- pinch of nutmeg

- salt to taste


Put the butter and garlic in a large saucepan and heat on a low flame for about 3 minutes, until the garlic is fragrant but before the butter begins to brown or burn. Next, add the stock and turn the flame up to high.

Once the stock is boiling, add the broccoli and turn the flame down to medium. Simmer with the lid off for about 15 minutes or until the broccoli is cooked. 

Using a hand held immersion blender, whizz up the soup until it is the desired consistency. Add the nutmeg, and salt to taste.

I like to serve it with a drizzle of olive oil on top or a spoonful of yoghurt. And toast, of course...
